Homestyle Chicken Pot Pie

One of my favorite meals to eat in the winter is chicken pot pie. It’s definitely one of my top comfort foods and it makes a great pairing with cold weather. I’m very happy to bring to you my favorite recipe for chicken pot pie, and believe me, I have tried many. Don’t let the pie crust fool you! You don’t need much skill for this one. ;)
Ingredients: 1 lb chicken, 1/3 cup flour, 1 cup milk, 1 cup chicken broth, 1 package of frozen mixed vegetables, 1/3 cup butter, 2 pie crusts

1. Take your thawed chicken breast, or thighs, and place in a greased glass pyrex dish. Place in oven at 400 degrees for 30 minutes. While this is cooking, you can prepare the remaining ingredients.

2. Take your pie crusts out of the fridge to thaw.
3. Place your nonstick pan on the stove, on medium heat, and place 1/3 cup of butter in pan to begin melting. Slowly start adding in a little bit of your flour and whisk together. As the butter melts, add more flour until all of the flour is poured. You will then have a "pancake like batter" mixture. Make sure to keep whisking it so it does not burn on the pan. The mixture should begin to simmer/bubble.
4. Once the mixture has begun simmering, pour in 1 cup of milk and continue to whisk. The mixture will be much thinner now but keep whisking and it will begin to thicken up very quickly and have a "mashed potatoes" texture.
5. Now pour in 1 cup of chicken broth and turn down the burner a notch. Whisk every couple of minutes until the mixture turns back into a "pancake" like texture. You can buy chicken broth already made from the store or you can use chicken bouillon cubes instead. I usually use bouillon cubes because I always have them on hand. If you use them, boil a cup of water on the stove and add in the cube. Stir around until it completely dissolves and add into the flour mixture.

6. Once the base of your mixture is complete, add in your mixed vegetables. Turn the heat all the way down to low and stir until the mixture is completely covered.

7. Lay your pie crust down in the pie plate. Press the crust down until it takes the shape of the pan. Now add in your vegetable mixture into the pie crust.
8. Your chicken should be close to done cooking by now. When it is completely cooked through, begin cutting/shredding your chicken into small pieces. DON'T TURN OFF YOUR OVEN. Leave it on for the chicken pot pie to cook at the end. Now place your chicken onto your vegetable mixture and lightly press in with a spoon to submerge the chicken.
9. Place the remaining pie crust on the top and fold the outsides over so it does not hang off the plate. I like to overlap mine when I am folding them to dress it up a bit. Poke in a few air holes with your fork to allow heat to seep in while cooking.
10. Place in the oven at 400 degrees for 30 minutes. Take out and cool before eating.
Tah-Dah!!!! Your finished product should look somewhat similar to mine above. I hope you realized that this recipe is a lot easier than you might have assumed it was.
