Taco Soup Recipe

The perfect taco soup recipe...that’s what I’m about to give you. Well, pretty darn close to perfect, if you ask me. I don’t know anyone who doesn’t enjoy eating taco soup on a cold winter day. If you prefer to have a soup that is hearty and very filling, then this is the soup for you. You can use this recipe for the stovetop, crockpot or instant pot. Keep on reading to see more!


Ingredients: 1 lb lean ground beef/turkey, taco seasoning packet, ranch dip packet, 1 yellow onion, 14.5 oz golden hominy, 14.5 oz black beans, 14.5 oz kidney beans, 14.5 oz fire roasted tomatoes

Serving Size - 6 to 8 bowls



*I will be giving the instructions to the recipe using the IP. To use the crockpot, brown the meat on the stove and add all of the ingredients into the pot to cook on low (8 hours).

1. Turn your IP on "saute", add in a splash of olive oil, and throw in your ground meat. Allow the meat to brown, using your utensil to break it up. When all of your meat is brown, add in your taco seasoning packet and ranch packet and stir in. Let the mixture cook for a few more minutes.



2. Peel and chop your yellow onion into small cubes and add into the pot and stir.



3. Push "cancel" and hit "manual" and set to 8 minutes. Add in your can of drained hominy, kidney beans, and black beans. Open your tomatoes and pour in. Now fill the tomato can with water and pour into the mixture and repeat one more time.



4. Mix your ingredients in the IP. Place your lid on the IP and set the valve to seal.

5. The IP will take a few minutes to warm up. Once it cooks for 8 minutes and beeps 3 times, let the soup sit until the IP says "L0:10". Now use a utensil to turn the valve to allow the remaining pressure to release. BE EXTREMELY CAREFUL! Do not touch the steam. It is very hot. Once all of the steam has released, you may open the IP.

6. Stir around the soup one more time and it is ready to enjoy! Add on top of the soup your favorite shredded cheese, sour cream, avocado, and chips!
