Sour Cream Noodle Bake

While we were home last week for the holidays, my mom made this casserole dish for us and it was one of the tastiest meals I have ever had. It made so much food that six of us ate it and we still had leftover food. My son saw the noodles and was hooked and my husband asked me if I could make this for us when we got home. So what did I do? I made sure to incorporate the meal into our week of dinners. All credit goes to Mama Stanley on this one!

Ingredients:
1 lb ground meat (2lbs to make more filling)
16 oz egg noodles
8 oz shredded cheese - any cheese will work
8 oz cream cheese
16 oz sour cream
1 bunch of green onions
15 oz tomato sauce
Serving Size - 8-10

1. Start by preheating your oven to 375. Go ahead and take your cream cheese out of the fridge to thaw.
2. Fill a large pot of water 3/4 way full of water. This will be for your bag of noodles to boil in so make sure there is enough water for the whole package. Place your noodles in the pot once the water is boiling.
3. Now take a large skillet and throw in 1 pound a ground meat. Brown the meat like usual and add in any seasonings you prefer.
4. When the meat is done cooking, add in your tomato sauce. Stir in with the meat and turn down the stovetop to low heat. I had a large 24 oz jar of tomato sauce in my pantry so I just used about half. However, you can add anywhere between 15-24 oz of tomato sauce that you would like. If you are using two pounds of meat then I would use the whole 24 oz jar.

5. While the noodles are finishing up, take your cream cheese and sour cream. Combine in a bowl and stir until it is well blended. If your cream cheese isn’t completely thawed, then place in a glass bowl and microwave for 20-30 seconds.
6. Now take your green onions. Wash them and cut off the heads. You can use as many as you would like, but I used about 4-5. Take the ends of your onions and slice them into small pieces. Add into your cream cheese/sour cream mixture and stir until completely blended.
7. Take a 9x13 glass casserole dish and spray lightly with nonstick spray. Add in your meat and press flat with your spoon.

8. Now here comes the tricky part: laying your soure cream/cream cheese flat on top of the meat. I like to take spoonfuls of the cheese/cream mixture and place it randomly on the meat first. Then, take your spoon and lightly press and smooth the cheese flat on top of the meet.

9. Once your noodles are finished cooking. Drain them and add them to the next layer in the casserole dish. Press down flat with a spoon and sprinkle on all of your cheese.
10. Since everything is already cooked, you are just placing the dish into the oven to heat it all together. Place the dish in the oven for 15-20 minutes at 375, depending on how melted you would prefer your cheese to be. Once the dish has cooled you are ready to serve! :)
